
Nothing says 'summer feast' more than perfectly charred chicken breast. Simply slice, season with salt and pepper (or marinate in the spices of your choice!) and slap it on the barbie for the latest addition to your backyard cook up. Delicious!

Preheat the BBQ to a medium heat. Place the chicken breast between two sheets of baking paper. Pound the chicken with a meat mallet or rolling pin until it is an even thickness, about 2cm thick. In a medium bowl, combine a drizzle of olive oil and a pinch of salt and pepper. Add the chicken and turn to coat. When the BBQ is hot, grill the chicken, turning, until charred and cooked through, 8-12 minutes. Transfer to a plate to rest for 5 minutes before slicing.
No BBQ or flat plate? Place your hand flat on top of the chicken breast and slice through horizontally to make two thin steaks. In a large frying pan, heat a drizzle of olive oil over a medium-high heat. Cook chicken until cooked through, 3-5 minutes each side.
