Cooking Steps

Get prepped
1
  • Preheat the oven to 200°C/180°C fan-forced (remove two wire racks first).
  • Cut capsicum into bite-sized chunks. Thinly slice red onion (see ingredients). Roughly chop baby spinach leaves.
Cook the capsicum & prawns
2
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Add capsicum and prawns and cook, until tender, 5-6 minutes.
  • In the last minute, add mild north spice blend, tossing to combine.
  • Transfer to a large bowl with chopped spinach and red onion. Drizzle with olive oil and toss to combine.
Make the curry sauce & bake the pizza
3
  • Heat a medium saucepan over medium heat. Add the butter and plain flour and cook, stirring, until a thin paste forms, 1 minute.
  • Remove pan from heat, then slowly whisk in the milk and mild curry paste (see ingredients) . Whisk until smooth.
  • Place the large wraps directly on the wire racks, rough-side down, and use the back of a spoon to spread curry sauce evenly.
  • Top with capsicum mix and cheddar cheese.
  • Bake the pizzas on the rack for 10 minutes, or until the cheese is melted, bubbly, and starting to turn golden on the edges.

TIP: Placing the pizzas directly on the wire rack helps the base to crisp up.

Finish & serve
4

• Divide prawn tikka pizzas between plates.
• Dollop with any remaining yoghurt.
• Tear over coriander (including stalk) and sprinkle with chilli flakes (if using).
• Season with a good grind of black pepper, then slice to serve. Enjoy!
