• Preheat oven to 240°C/220°C fan-forced.
• Cut sweet potato into bite-sized chunks.
• Place sweet potato and chopped veggie mix on a lined oven tray. Sprinkle with Aussie spice blend. Drizzle with olive oil and season with salt, then toss to coat. Bake until tender, 20-25 minutes.
• Meanwhile, place pork, garlic & herb sausages on a second lined oven tray. Bake for 10 minutes.
• Turn sausages, then continue baking, until browned and cooked through, a further 10-15 minutes.
• Once veggies have roasted, add baby spinach leaves to veggie tray. Toss to combine.
• Divide roasted veggie toss between plates. Top with the pork, garlic & herb sausages.
• Serve with tomato relish.
