• Preheat oven to 240°C/220°C fan-forced. • Cut sweet potato into bite-sized chunks. • Place sweet potato and chopped veggie mix on a lined oven tray. Sprinkle with Aussie spice blend. Drizzle with olive oil and season with salt, then toss to coat. Bake until tender, 20-25 minutes.
