- Cut haloumi into 1cm-thick slices.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook haloumi until golden brown, 1-2 minutes each side. Transfer to a paper towel-lined plate.
- Season beef burger patty generously on both sides.
- Return frying pan to medium-high heat with a drizzle of olive oil. Cook patties until just cooked through, 6-7 minutes each side (cook in batches if your pan is getting crowded).
- In the last 1-2 minutes of cook time, sprinkle Cheddar cheese over patties and cover with a lid or foil until the cheese melts.
- Meanwhile, roughly chop tomato. Thinly slice brown onion (see ingredients).
- In a second large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion, stirring regularly until softened, 5-6 minutes.
- Reduce heat to medium. Add tomato, the balsamic vinegar, brown sugar, a pinch of chilli flakes (if using) a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl.
TIP: Some like it hot, but if you don’t just hold back on the chilli flakes.
- Toast or grill bake-at-home burger buns to your liking.
- Spread burger sauce over bun bases.
- Top with smashed beef patties, haloumi, tomato chilli relish and gourmet leaf mix. Enjoy!
