• Drain sweetcorn. Roughly chop celery. Cut lime into wedges.

 • In a large bowl, add celery, slaw mix, squeeze of a lime and a drizzle and olive oil. Season to taste and set aside.

• Heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook beef mince, sweetcorn and Tex-Mex spice blend, breaking up with a spoon, until just browned, 4-5 minutes.

• Microwave mini flour tortillas on a plate in 10 second bursts, until warmed through.
