This week's special ingredient is Avocado - creamy, dreamy and packed with goodness! Give your avocado a gentle squeeze - ripe avocados yield slightly but aren’t mushy! If yours is firm, let it ripen on the bench (not the fridge!) until it’s just right.

Bake-At-Home Continental Rolls
330 g
Chicken Breast
1 sachet
Garlic & Herb Seasoning
1 packet
Panko Breadcrumbs
1 packet
Plant-Based Aioli
2
Sweet Potato
1 sachet
Nan's Special Seasoning
1 packet
Spinach & Rocket Mix
1 drizzle
balsamic vinegar
1 drizzle
olive oil
1 tbs
flour
2 tbs
plant-based milk
• Preheat oven to 240°C/220°C fan-forced. • Cut sweet potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil, sprinkle over Nan's special seasoning and toss to coat. • Bake until tender, 20-25 minutes. TIP: If your oven tray is crowded, divide fries between two trays.
• Meanwhile, place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. • In a shallow bowl, combine the plain flour, salt and garlic & herb seasoning. In a second shallow bowl, whisk the egg. In a third shallow bowl, place panko breadcrumbs. Dip chicken into flour mixture to coat, then into egg, and finally in breadcrumbs. Set aside on a plate.
• When fries have 10 minutes remaining, heat a large frying pan over medium-high heat with enough olive oil to coat the base. • Cook crumbed chicken in batches until golden and cooked through, 3-5 minutes each side. Transfer to a paper towel-lined plate. TIP: Add extra oil if needed so the crumbed chicken doesn't stick to the pan! TIP: Chicken is cooked through when it's no longer pink inside.
• Meanwhile, slice avocado in half, scoop out flesh and thinly slice. • In a medium bowl, combine a drizzle of the balsamic vinegar and olive oil. Season with salt and pepper. • Just before serving, add spinach & rocket mix and toss to coat.
• Halve plant-based burger buns and bake directly on a wire oven rack, until heated through, 2-3 minutes.
• Spread each base with some plant-based aioli. • Top with a crumbed chicken patty, avocado slices and some salad. • Divide burgers and spiced fries between plates. Serve with any remaining aioli. Enjoy!
