• Preheat oven to 220°C/200°C fan-forced. In a large frying pan, heat a drizzle of olive oil over high heat. • See 'Top Steak Tips!' (below). Season premium sirloin tip all over and add to hot pan. Sear until browned, 1 minute on both sides.
• Transfer sirloin tip to a lined oven tray and roast for 17-22 minutes for medium or until cooked to your liking. • Remove from oven and cover with foil to rest for 10 minutes.
TIP: The meat will keep cooking as it rests!
• Meanwhile, cut potato into 0.5cm rounds. • Place on a second lined oven tray. Drizzle with olive oil, season with salt and gently toss to coat. Spread out in a single layer. • Roast until tender, 25-30 minutes.
• When beef is resting, return frying pan to medium heat. • Cook sweet & savoury glaze, the butter, a splash of water and any beef resting juices until slightly thickened, 1-2 minutes. Season with salt and pepper.
• In a medium bowl, combine slaw mix, baby spinach leaves and a drizzle of vinegar. Season to taste.
• Slice sirloin tip. • Divide beef sirloin tip, roast potato rounds and slaw between plates. • Pour sticky glaze over beef and potatoes. Enjoy!
