Heat olive oil in a frying pan over a high heat. Thinly slice capsicum. Drain sweetcorn. Cook capsicum and sweetcorn until tender, 3-4 mins. Transfer to a bowl.
Meanwhile, finely chop chives. Cut lime into wedges. Mix chipotle sauce and mayo. Return pan to a high heat with olive oil. Cook beef and spice blend, tossing, until browned, 1-2 mins.
Now, zap rice in microwave until steaming, 2-3 mins. To the bowl with capsicum, add slaw mix and a good squeeze of lime juice. Drizzle with oil, toss and season. Plate up rice, beef strips, slaw and extra lime wedges. Drizzle with mayo. Garnish with chives.
