• Preheat oven to 240°C/220°C fan-forced. Cut sweet potato into fries. Place on a lined oven tray. • Drizzle with olive oil, season with salt and toss to coat. Bake until just tender, 20 minutes. • Remove from oven. Sprinkle with shredded Cheddar cheese and bake until golden, 5 minutes.
TIP: If your oven tray is crowded, divide between two trays.
• Meanwhile, thinly slice tomato into rounds.
• In a medium bowl, combine peri-peri seasoning, a drizzle of olive oil and a generous pinch of salt. Add plant-based crumbed chicken, tossing to coat.
• With 10 minutes remaining on the fries, in a large frying pan, heat enough olive oil to coat the base over medium-high heat. • Cook plant-based crumbed chicken until golden and heated through, 2-3 minutes on each side. Transfer to a paper towel-lined plate.
• Meanwhile, have bake-at-home burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes.
• Spread the burger buns with smokey aioli. Top with peri-peri chick'n, mixed salad leaves and tomato slices. • Serve with cheesy sweet potato fries. Enjoy!
