Lemon

• Thinly slice capsicum and brown onion.
• Slice lemon into wedges.
• Roughly chop parsley.

• In a large frying pan, heat a drizzle of olive oil over high heat.
• Cook capsicum and onion, until tender, 5-6 minutes.

• Remove from heat, add a good squeeze of lemon juice, parsley and a pinch of salt and pepper. Stir to combine.

• Transfer to a serving bowl. Enjoy!
