Cooking Steps

Cook the veggies & bacon
1
  • Thinly slice capsicum and onion.
  • Cut bacon into 1cm pieces.
  • Roughly chop mild chorizo.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook capsicum and onion, until tender, 4-5 minutes.
  • Add bacon and chorizo and cook, breaking up with a spoon, until golden, 4-6 minutes.
Cook the tortellini
2
  • Boil the kettle.
  • Pour boiled water from the kettle into a large saucepan over a high heat.
  • Bring to the boil, add spinach & ricotta tortellini and cook until al dente, 3 minutes.
  • Reserve pasta water (1/3 cup for 2 people / 2/3 cup for 4 people). Drain tortellini and return to saucepan.
Bring it all together
3
  • Once veggies are done, return saucepan to medium-high heat.
  • Add cooked bacon, chorizo and veggies, tomato sugo, tomato & herb seasoning and the reserved pasta water, tossing until heated through and well combined, 1-2 minutes. Add baby spinach, stirring until wilted, 1 minute. Season to taste.
Serve up
4
  • Divide bacon, chorizo and sugo tortellini between bowls.
  • Garnish with Parmesan cheese. Enjoy!

Review summary

Updated on July 2026
  • Flavour: Some found the tomato sugo quite heavy; adding a splash of cream or reducing the tomato-and-herb seasoning helped balance the flavours.
  • Ease of prep: Quick to pull together, though some noted that cutting the capsicum and onion into shorter pieces made them easier to eat alongside the bite-sized tortellini.
  • Suggestions: Several reviewers felt the seasoning mix was overpowering, so consider using less to let the tortellini flavour come through. A little extra meat or a splash of cream are tips some customers found improved the dish.
  • Portions: Some felt the ratio leaned heavily toward vegetables and carbs, with less protein than expected for a meat-forward dish.
