Cooking Steps

Cook the noodles

• Boil the kettle. Place bean vermicelli noodles in a medium heatproof bowl.
• Add enough boiling water to cover noodles. Cover and set aside until tender,  4-6 minutes.
• Drain, rinse and return to bowl with a drizzle of olive oil.  

Get prepped & cook the salmon

• Meanwhile, thinly slice cucumber into sticks.
• Remove centre veins from makrut lime leaves, then very finely chop.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Pat salmon dry with paper towel and season both sides.
• When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side. Transfer to a plate and cover to keep warm.

TIP: Patting the skin dry helps it crisp up in the pan! 

TIP: The makrut lime leaves are fibrous so you want to cut them into small pieces!

Make the sauce

• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil. Cook ginger lemongrass paste until fragrant, 1 minute.
• Add coconut milk, makrut lime leaves, oyster sauce, the brown sugar, soy sauce and water.
• Reduce heat to medium-low. Simmer until slightly reduced, 2-3 minutes. Season to taste with pepper.

• Divide vermicelli noodles and salmon between bowls. Pour over coconut sauce.
• Top with cucumber and tear over coriander to serve. Enjoy!
