• Thinly slice cucumber into half-moons. • Thinly slice apple into wedges.

• Roughly chop roasted almonds and parsley leaves.

• In a medium bowl, combine baby spinach leaves, Parmesan cheese, cucumber, apple, a pinch of salt and pepper and a drizzle of olive oil.
