with Tomato Relish & Burger Sauce

Served warm, these elegant, crispy bites are the perfect Christmas finger food packed with savoury flavour and easy to enjoy while you're caroling or unwrapping gifts.

Cooking Steps
- Preheat oven to 220°C/200°C fan-forced.
- Thinly slice brown onion.
- Heat a large frying pan over high heat. Cook lamb mince (no need for oil!) and brown onion, breaking up with a spoon, until just browned, 4-5 minutes.
- Add All-American spice blend and cook until fragrant, 1 minute. Season to taste.
- On a flat surface, evenly stack 3 sheets of filo pastry with a drizzle of olive oil between each layer.
- Spoon half the lamb mixture, gherkin relish and Cheddar cheese down the long side of the filo sheet then roll the pastry over into a log shape.
- Evenly stack another 3 sheets of filo pastry and repeat with remaining lamb mixture, gherkin relish and cheese to make 2 logs.
- Cut each log into 10 even pieces (you should have 20 in total).
- Place filo-wrapped bites 3cm apart on a lined oven tray.
- In a small bowl, whisk the egg.
- Brush egg wash over the top of the filo-wrapped bites and sprinkle with sesame seeds.
- Bake until golden and crisp, 12-15 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- Place lamb cheeseburger filo-wrapped bites on a serving platter.
- Serve with burger sauce. Enjoy!
