Cooking Steps

1
  • Preheat oven to 240°C/220°C fan-forced. Cut potato into wedges. Thinly slice apple into wedges. Halve the Brussels sprouts.
  • Place wedges on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes.
2
  • Meanwhile, place Brussels sprouts on a second lined oven tray.
  • Drizzle with olive oil, season with salt and pepper and toss to coat.
  • Arrange cut-side down and roast until tender, 15 minutes.

TIP: The Brussels sprouts will char slightly, this adds to the flavour!

3
  • Lightly crush the semi-roasted Brussels sprouts on the tray.
  • Sprinkle with Cheddar cheese. Return to oven to roast until golden, 5 minutes.
4
  • While sprouts are roasting, in a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook chicken tenderloins and All-American spice blend, until browned and cooked through, 3-4 minutes each side.

TIP: Chicken is cooked through when it is no longer pink inside.

5
  • In a medium bowl, combine the honey, a pinch of chilli flakes and drizzle of white wine vinegar and olive oil.
  • Add apple and mixed salad leaves, tossing to coat. Season to taste.
6
  • Divide Southern chicken tendies, cheesy crushed Brussels sprouts, wedges and hot honey salad between plates. Enjoy!

Review summary

Updated on July 2026
  • Flavour: The cheesy crushed Brussels sprouts were a standout, and the sweet-and-smoky combination worked well together. Some found the chicken a little flavourless or dry, and suggested serving it with a garlic aioli or yoghurt dressing on the side.
  • Ease of prep: The recipe comes together without much fuss, though managing the different timings for each component takes a little attention.
  • Suggestions: Adding sliced carrot to the Brussels sprouts tray is an easy way to bulk up the vegetables. Some prefer cooking the chicken in an air fryer for a cleaner result, and a few found the apple quantity a touch generous if you prefer less sweetness in the salad.
  • Portions: Most found the portions satisfying, though those wanting a heartier winter meal may like to add extra vegetables to round it out.
