Cooking Steps

1
  • Add the water to a medium saucepan and bring to the boil.
  • Add jasmine rice, stir, cover with a lid and reduce heat to low.
  • Cook for 10 minutes, then remove the pan from heat and keep covered until rice is tender and all the water is absorbed, 10 minutes.

TIP: The rice will finish cooking in its own steam so don't peek

2
  • Meanwhile, finely chop brown onion.
  • Trim and thinly slice pea pods lengthways.
  • Using a vegetable peeler, peel carrot into ribbons.
  • Trim baby cos lettuce and separate leaves.
  • Drain sweetcorn.
3
  • In a large frying pan, heat a drizzle of olive oil over high heat.
  • Cook pork mince, sweetcorn and onion, breaking up with a spoon, until just browned, 3-4 minutes.
  • Reduce heat to medium, then stir in sweet chilli sauce, oyster sauce and the water (for the sauce) and simmer, until slightly reduced, 1-2 minutes. Season with pepper.
4
  • Add pea pods and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave pea pods on high until just tender, 2-3 minutes.
  • Drain any excess liquid, then season with salt and pepper. Cover to keep warm.
5
  • To the pan with rice, stir in the vinegar, sugar, mayonnaise, mixed sesame seeds and the salt, until coated.
  • Lay a piece of cling wrap on a clean surface and place a heaped spoonful of rice mixture in the centre.
  • Gather the cling wrap up around the rice and twist tightly at the top to create balls (3-4 per person).
6
  • Divide lettuce cups, carrot and pea pods between plates. Fill lettuce cups with confetti pork.
  • Serve with sesame rice balls. Enjoy!

Customer reviews

Review summary

Updated on July 2026
  • Flavour: The pork filling was well-received, though some found the overall dish quite sweet and suggest using less sugar to taste.
  • Ease of prep: Most found the meal straightforward, but the rice balls were a common sticking point — fiddly to shape and not considered essential to the dish.
  • Suggestions: Several customers skipped the rice balls entirely and served the rice alongside the pork instead, finding it just as enjoyable. Leaving the pea pods slightly crunchy rather than fully microwaved was also recommended for better texture.
  • Portions: A few customers felt the pork mince quantity was on the smaller side and suggested adding extra vegetables to bulk out the meal.
  • Presentation: Some found the cos lettuce leaves too small or awkward to hold the filling neatly, with a couple of customers suggesting iceberg lettuce as a sturdier alternative.
