• Boil the kettle. Half-fill a medium saucepan with the boiling water. • Add jasmine rice and a pinch of salt and cook, uncovered, over high heat until tender, 12 minutes. Drain. • Meanwhile, thinly slice long chilli (if using). Pat prawns dry with a paper towel. • In a small bowl, combine oyster sauce, the honey, half the sesame seeds and a splash of water. Set aside. • In a medium bowl, combine cornflour and a pinch of salt. Add prawns, tossing to coat.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook broccoli & carrot mix, tossing, until tender, 5-6 minutes. • Add garlic paste and cook until fragrant, 1 minute. • Transfer to a bowl.
TIP: Add a dash of water to the pan to help speed up the cooking process.

• Return frying pan to medium-high heat with a generous drizzle of olive oil. • Shake off excess flour from prawns, then cook prawns, tossing, until pink and starting to curl up, 3-4 minutes. • Return veggies to the pan. • Add sauce mixture and cook, tossing, until combined, 1 minute. Remove from heat.
TIP: Cook prawns in batches for best results!

• Divide garlic rice between bowls. Top with sesame honey prawns and veggies. • Sprinkle over remaining sesame seeds. Garnish with chilli to serve. Enjoy!
