Classic peppercorn sauce

This creamy steak sauce comes together quickly. Place two tablespoons of red wine vinegar in a large, non-stick frying pan and bring to a simmer. Add 150 ml chicken stock and reduce by half over high heat. Add two teaspoons of green peppercorns, crushing a few gently with the back of a spoon. Season, stir in four tablespoons of double cream, then simmer for one to two minutes until the sauce thickens slightly.

Salsa verde

This fresh, zesty Italian green sauce requires no cooking and is perfect for quick, easy sides. Finely chop a small bunch each of parsley, chives, and mint. Then mix in:

  • One teaspoon capers
  • Two to three chopped anchovies
  • One crushed garlic clove
  • The juice of one lemon
  • Three tablespoons of olive oil

Béarnaise butter

Heat a splash of oil in a small saucepan over medium-high heat, add shallots, and cook until softened (about three to four minutes), stirring continuously. Add one garlic clove and cook for another minute. Transfer to a bowl, let cool, then mash together with 30g butter. Finally, stir in chopped parsley and tarragon. This rich, herby butter brings out the flavours in premium steak dishes, adding a decadent touch to your plate.
