Drain sweetcorn. Cut chicken breast into 2cm strips. In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook chicken tenderloins until browned and cooked through, 3-4 minutes each side. When chicken has cooled slightly, shred chicken with 2 forks.

TIP: Chicken is cooked through when it is no longer pink inside.

In a medium bowl, combine sweetcorn, shredded chicken, BBQ sauce, mayonnaise and shredded Cheddar cheese. Season to taste.

Build your sandwiches by layering mixed salad leaves and chicken filling on sourdough slices. Wrap in foil or plastic wrap. Refrigerate until ready to serve.
