Preheat oven to 240°C/220°C fan-forced. Cut potato into wedges. Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Spread out in a single layer, then bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
Meanwhile, thinly slice cucumber into rounds. In a medium bowl, combine white wine vinegar and a good pinch of sugar and salt. Add cucumber to pickling liquid. Add enough water to just cover cucumber. Set aside.
TIP: Slicing the cucumber very thinly helps it pickle faster!
While cucumber is pickling, thinly slice red onion (see ingredients). In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion, stirring regularly, until softened, 5-6 minutes. Reduce heat to medium. Stir in some pickling liquid (2 tbs for 2 people / 1/4 cup for 4 people) and the brown sugar. Cook until dark and sticky, 3-5 minutes. Transfer to a bowl. ~~~~~~~~~~ MODULAR STEP ~~~~~~~~~~ If you've added diced bacon, cook bacon with the onion, breaking up with a spoon,
While onion is cooking, combine beef mince, All-American spice blend, fine breadcrumbs, Dijon mustard (see ingredients), egg and a good pinch of pepper in a large bowl. Shape beef mixture into evenly sized patties (one per person) slightly larger than the burger buns.
Wipe out frying pan and return to medium-high heat with a drizzle of olive oil. Cook beef patties until just cooked through, 4-5 minutes each side. In the last 2-3 minutes of cook time, sprinkle shredded cheddar cheese over patties, then cover with a lid or foil and cook until cheese has melted. Meanwhile, place bake-at-home burger buns directly on a wire oven rack. Bake until heated through, 3 minutes.
~~~~~~~~~~ MODULAR STEP ~~~~~~~~~~
Sprinkle extra shredded Cheddar cheese over the patties as above.
Drain pickled cucumber. Slice burger buns in half. Spread each bun with burger sauce. Top with an American beef patty and a helping of caramelised onion and pickled cucumber. Serve with wedges and mustard mayo.
