• Thinly slice capsicum.
• Thinly slice cucumber into rounds.
• Slice avocado in half, scoop out flesh and roughly chop.
• Slice lemon into wedges.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat.
• Add capsicum and cook, until tender, 4-5 minutes. Transfer to a large bowl and set aside to cool slightly.

• Once capsicum has cooled, to bowl, add cucumber, avocado, spinach & rocket mix and golden goddess dressing.
• Add a good squeeze of lemon juice and toss until well combined. Season to taste.

• Divide golden goddess charred capsicum salad between bowls.
• Crumble over fetta cubes and garnish with roasted almonds. Serve with any remaining lemon wedges. Enjoy!
