Cooking Steps

Get prepped & cook the noodles

• Bring a medium saucepan of water to boil.
• Trim green beans and slice into thirds. Thinly slice carrot into half-moons.
• Cook egg noodles in boiling water, stirring occasionally with a fork to separate, until tender, 4-5 minutes.
• Drain, rinse with cool water and set aside.

Cook tofu

• Meanwhile, in a small bowl, combine oyster sauce, sweet chilli sauce, brown sugar and a splash of water.
• In a large frying pan, heat a drizzle of olive oil over high heat.
• When the oil is hot, cook tofu in batches until browned and cooked through, 1-2 minutes. Season. Transfer to a plate.

TIP: Cooking the tofu in batches over a high heat helps it stay tender.

Bring it all together

• Return pan with a drizzle of olive oil to high heat.
• Cook green beans and carrot until tender, 4-5 minutes. Season.
• Add ginger paste and cook, until fragrant, 30 seconds.
• Add cooked noodles, a pinch of chilli flakes (if using), sauce mixture and return cooked tofu to pan and cook, tossing to combine, 1 minute.

Finish & serve

• Divide ginger tofu noodle stir-fry with veggies between bowls.
• Top with crispy shallots to serve. Enjoy!
