Couscous with Roasted Vegetables
(Contains Gluten, Wheat; May be present: Soy, Crustacean, Egg, Fish, Milk, Sesame, Sulphites, Almond, Cashew, Pecan, Pine Nut, Walnut. )

Olive Oil
Slice capsicum. Heat olive oil in a frying pan over high heat. Cook capsicum for 3-4 mins. Add beef strips and seasoning and cook, tossing, until browned, 2 mins. Season to taste.
Meanwhile, prick holes in couscous packet. Microwave couscous until steaming, 1 min. Roughly chop almonds.
In a bowl, combine spinach & rocket and couscous. Drizzle with oil and season to taste. Plate up couscous and top with beef and capsicum. Serve with tzatziki, almonds and crumbled fetta.
