To answer this question, we studied search engine data surrounding what dishes Australians wanted information on "how to" prepare in the lead up to and around Christmas - here are the results.

Turkey & Ham Are The Winners!

Perhaps unsurprisingly, turkey and ham enjoyed the biggest spike in searches for December, with searches for "how to" prepare both dishes increasing more than 2700% during the lead up to Christmas. Between the two types of meat, turkey is the leader with a search interest spike more than double that of ham.
This could be because the iconic holiday turkey is more traditional in the United States, and thus Australians need instruction on how to prepare it for their own Christmas gatherings.
The other top contenders were trifle, pavlova, gingerbread, and eggnog.

Australians Rush To Prepare Their Christmas Dishes

The data we found reveals that interest in "how to" prepare different Christmas dishes seems to start increasing around 2 weeks before the holiday, no doubt reflecting research by those planning ahead for their Christmas gatherings. However, the biggest overall spike occurs during the week of Christmas. This isn't suprising since most people tend not to think about holiday food preparation until the week of the gathering. The charts below represent spikes in search interest during the week of Christmas 2019.
